Oyster Cracker Goodness

I like to have different snacks from time to time and recently I have seen this recipe, and really want to try it. Its quick and easy and you can store them for later. there are several out on the web. this one is from the Hidden Valley site.

  • ½ teaspoon of dill weed
  • ¼ cup of vegetable oil
  • 1 bag (16 ounces) oyster crackers
  • 1 packet (1 ounce) Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix
  • Optional: ¼ teaspoon lemon pepper or ¼ teaspoon garlic powder

 

Place crackers in a large bowl. Pour oil over crackers and mix to coat.
Add dressing mix and spices;  and thoroughly mix again until coated.

Bake on cookie sheet at 250°F for 15 to 20 minutes or until golden brown.

BRUSCHETTA – my new favorite :)

With the move to Florida we have had the opportunity to try different restaurants, and my new favorite is Al’s Pizza. From the deep dish pizza with mushrooms and peppers to the Bruschetta.

AL’S BRUSCHETTA -Toasted Garlic Bread served with a side of fresh diced Roma Tomatoes, Basil & Garlic. Finished with crumbles of Feta Cheese.

Yum!!

Bruchetta

 

Pretty easy to make:

  • 6 or 7 ripe plum tomatoes (about 1 1/2 lbs)
  • 2 cloves garlic, minced
  • 1 Tbsp extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 6-8 fresh basil leaves, chopped.
  • Salt and freshly ground black pepper to taste
  • Feta cheese
  • Italian bread

 

Nonnie’s Salad Dressing….A Holiday Favorite

Here is a family favorite, we made this again for Christmas and everyone loves it.

Nonnie’s Salad Dressing

3/4 cup white wine vinegar
1/2 cup sugar
3/4 tsp black pepper
1/4 tsp minced garlic or 1/8 tsp garlic powder.

Mix and store overnight for best taste!

P.S.
We add green olives to the salad and top it with Parmesan cheese.
